Stručná osnova predmetu | |
The aim of food toxicology is to give graduates an informed knowledge of the course of poisoning, biotransformation and distribution of toxic substances, including pharmaceuticals, in the animal body. Emphasis will be placed mainly on chronic, clinically unmanifest poisonings, which may be caused by prolonged intake of xenobiotics from food or feed in humans and animals. The course will mainly focus on: characterization of poisonous substances, (LD50 and LC50, accumulation and persistence, calculation of LD50 values), definition of acute and chronic toxicity, description of hidden - non-manifest effects of poisons (carcinogenicity, teratogenicity, embryotoxicity, allergies and immunopathological changes), description of endogenous and exogenous factors influencing toxicity of poisons, elucidation of methods for estimating the risks of chemicals to humans, animals and the environment, characterization of residues of pharmaceutical and non-medicinal chemicals and naturally occurring food poisons, and description of their toxicological effects on humans and animals. It will also include an introduction to national and European legislation in toxicology |
